Ingredients

  • Lemon or Orange Cake Mix – 1 package
  • Lemon Gelatin – 1 package
  • Milk 1/3 Cup
  • Lemon Extract 2 t.
  • Calamondin Puree 1 Cup
  • Eggs 4
  • Cooking Oil ½ Cup
  • Powdered Sugar, sifted 2 Cups
  • Milk (or half-and-half, or water) 3 – 4 T.
  • Lemon Extract 1 t.

Cook time: 35-40 mins  |  

Ready in: 55-60 mins

Serves: 10–12

Moist, dense citrus cake with a distinct tangy and tart flavor.

Cooking Steps

    Preheat oven to 350 degrees. Wash and seed fruit. Place in blender and puree, leaving some small pieces. Combine cake mix and gelatin, mix well. Combine extract, puree, eggs, and oil. Add to batter & mix well. Bake in greased pan until cake begins to leave sides of pan, approximately 30 – 45 minutes. Prepare glaze: Whisk powdered sugar, 2 -3 T. of milk, and lemon extract until smooth and glossy. Drizzle additional milk, a little at a time, to reach desired consistency. Pour or brush over cake while hot.
