Ingredients

  • 5 large carrots, rinsed and trimmed
  • 1 large or 2 small overripe bananas (we like goldfinger)
  • 1 tsp ground ginger
  • 1/2 inch fresh turmeric (or 1 tsp ground)
  • 1-2 cups apple cider vinegar (start with 1, add more as desired)

This oil-free dressing livens up salad greens while adding a touch of natural sweetness and a serving of fruit and veggies to your dish.

Cooking Steps

    Place all ingredients in a high-speed blender; set to smoothie and watch it go.

    Add more vinegar as necessary to achieve desired consistency.

    Transfer to a mason jar for storage. Use immediately or let sit overnight to allow flavors to meld.

    Should keep in the fridge for 3-4 weeks.

Cook's note:

Fresh ginger may be substituted, but it should be grated prior to adding it to the blender to ensure proper distribution.

Editor's note:

If you like a sweeter dressing you can add a touch of maple syrup.
