  • Branch of rosemary
  • 2 green Kyo Savoy mangoes
  • 1 tsp sugar
  • Pinch of salt
  • Hot pepper of your choice
  • Vinegar

Pickles are a great way to use green mangoes; try these with your Kyo Savoy or experiment with other varieties that you might have on hand.

Cooking Steps

    Cut mangoes into spears.Slice strawberries. Slice strawberries. Juice starfruits. Juice starfruits.

    Place rosemary, salt, hot pepper, and sugar in a jar.
  • 3
    Add green mango spears, packed as tightly as possible.
  • 4
    Fill jar with vinegar to brim and close the lid. Transfer to a glass jar and store in the refrigerator.

    Let stand for a couple weeks to allow pickling process to occur.

Cook's note:

*For vinegar, we used a 50/50 blend of apple cider vinegar and white vinegar. If you are using purely white vinegar, use 1 tsp of sugar as opposed to 3/4.
