Ingredients

  • Papaya Pulp, strained 14 cups
  • Allspice, whole 4 T.
  • Cloves, whole 3 T.
  • Mustard Seed 3 T.
  • Cinnamon, stick 1
  • Ginger Root, chopped 1 piece
  • Onion, sliced 1 large
  • Red Pepper 1/8 t.
  • Sugar 6 T.
  • Salt 2 T.
  • Vinegar 1 1/3 cups
  • Tartaric Acid (substitute citric acid or lemon juice) ¼ t.

A tropical fruity condiment that is rich in vitamin C and digestive enzymes.

Cooking Steps

    Tie spices and onion in a cheesecloth bag, add to papaya, and cook slowly for 40 minutes. Add sugar, salt, vinegar, and tartaric acid. Cook until thick. Discard spices and onion in cheesecloth bag. Pour into sterilized jars and seal.
